I am going to abort on this attempt and follow the procedure listed on technet list as migrating from small business server 2000 or windows server 2000 server to windows small business server 2003. Before I do this I will demote the new server, reinstall the os, and then basically create a new domain and transfer users and computers over to the new domain… I told the client I would be done tonight and am starting at 4:30 PM… here goes nothing. :)

Hope it goes ok. My knowledge of SBS is that it must be the one and only FSMO role holder in the domain, which is perhaps why you had the problems having joined it to the 2000 domain, even though you did transfer roles to it.
