Why do you need to restart the host? Could you not just restart the network services or some agent/daemon rather than the whole of ESX?

If you do need to restart the host and your VMs are on shared storage, you can migrate them onto other hosts before the restart. You can initiate the restart from within the vSphere Client.

What is the standard procedure? Whatever you need it to be.

Shut down the guests, reboot the host, restart the guests.

Always a good idea to notify users first, and specify a longer outage than you actually need

it may well tell you to put it in maintenance mode before you do, but this isn't essential..

Yes, it does prompt you but doesn't prevent you from rebooting.

              My standard is this.

              1. VMotion all current online VM's from the server to another host.
              2. Right Click the host in VCentre and select Reboot.
              3. Once the system has been rebooted VMotion the VM's back from the other host.

              Job done.
