I am looking at setting up ESX 3.5. I am not sure on the number of VM's I will have on the server. I would like to know if there is a way to pool the CPU and RAM resources so I do not have to dedicate CPU and RAM to a VM that might not need it. For example with RAM if I have 4 GB of total RAM on the server and I have 8 VM running on the Server. Can I allocate 1 GB RAM to each of the 8 VM and ESX3.5 will allocate accordingly?

Yes you can but they will be competing for resources if they all use 1 GB. ESX will allocate the memory to each VM as is defined but you can define which VM's will get the priority.
