    Which Server OS?
    Hardware or software RAID?

Have you put the new drives in?
If so, copy data (XCopy will retain permissions) and recreate shares

I believe..... that if you add a larger volume to your RAID1 array, and let it rebuild.. then add a second larger volume
you'll have additional space and you can expand.... ?
I may be wrong here though

it looks like you are not running any SAN, DAS...
Normal server build in raid array doesn't have the feature to achive your goal.
like @ Ossian suggested, you might have to

        1. backup all your data,
        2. rebuild raid array with 2x 500GB
        3. restore the data

if this is for SAN, or any storage array, yes, is possible to add in storage on the fly.
