You use Share Point Portal or Share Point Services? Share Point Portal have build in support for docs changes tracking.

Versioning is turned off by default in your document libraries. To enable it open your document library and then hit "Modify Settings and Columns" and then "Change General Settings". On the "Change General Settings" page down near the bottom you will see the option to enable document versioning.

However, you need to be aware that there is no mechanism in place to limit the number of versions stored by SharePoint. It is entirely possible that if you enable versioning and someone uploads a huge PowerPoint presentation and it gets edited 10 times you now have 10 versions of that huge powerPoint presentation. This is something that they have said will be addressed in the next version of SharePoint.

      Hope that helps you!
