How do you handle this? I want to minimize user interaction in this regard.
Im wanting to deploy Adobe updates (security reasons) and Java updates for security reasons.

If we do this thru GPO and network installations then users wont install extras like tool bars and open office and so forth.

What do you guys do and what do you guys think?

Haven't done it for Java but Adobe Reader is fairly easy to deploy via GPO. You need to register with Adobe to get the MSI download and they have some (VERY poor) KB articles on how to do it. Whether or not the update packages are deployable via GPO I don't know, haven't tried that as yet.
