What do you want to change? The IP address of the server?

The amount of changes you must make depends on the roles of the server. To change a server's IP address and default gateway is fairly straightfoward, however, if other TCP/IP based roles are involved, then they will likely be affected as well. You mentioned a few key ones:

        Including but not limited to:
DHCP - scopes may have to be changed depending on network configuration
DNS - client DNS configuration may have to be changed if this is a DNS server
WINS - client WINS configuration may have to be changed if this is a WINS server
IIS - TCP/IP bindings in IIS may need to be modified depending on the IIS configuration
ACTIVE DIRECTORY - an IP address change could impact DNS settings for the AD database as well as Sites and Services configuration

Is this the only network host on the subnet that is impacted, or are you migrating or renumbering a subnet which contains this server as well as other network hosts such as client PCs?

I'm a little reluctant to proceed with pieces of information especially if this is your production work environment.

I don't want to sound too obvious but before you make any serious changes don't forget to check firewall and router config or you might have some problem in and outside the network.

          Good luck
