DO NOT use POP3 or SMTP over the internet, in fact don't use POP3 at all. It's a rotten legacy protocol that refuses to die.

Outlook Anywhere (Used to be called RPC over HTTP(S)) is definitely the way to go, have a look at this technet article. You get the same Outlook experience as internally, with access to contacts, calendars etc.

As it's SBS you need to run the appropriate wizard (I think it's Configure Email or something like that) and make sure that connect to Exchange from the internet is selected. I can't remember the exact steps off the top of my head, it's at least 6 months since I installed an SBS server.

Port 443 open is all you will need externally. Your clients will need to trust your root certificate and be configured appropriately, much of which can be automated in SBS. https://www.testexchangeconnectivity.com/ is a great way to test if things are working. Daniel has an article on the main site for configuring clients, it's for Outlook 2003 IIRC but most of it still applies.

If it is Outlook 2007 or higher, then Autodiscover can configure the clients automatically, as long as the DNS and SSL certificate are configured correctly.
