I assume you mean using the built in Backuprunner program and not a 3rd party program with built-in brick-level backup.
If so, then you need to create a recovery storage group and restore the entire mail server (Exchange) and then extract the individual mailbox from the recovery store using Exmerge or similar.
      Details can be found via

Iím honoured to have been selected for the SMB 150 list for 2013. This is the third time in succession (no logo available for 2011) that I have been honoured with this award.

This is my situation. I inherited maintenance on my clients SBS 2003 SYSTEM. Although I have some experience with computer system in general, I don't have any with SBS. On of the 20 users has an issue with their mail. They keep getting a message that the mailbox is corrupt. I have ran scanpst etc and doesn't seem to fix the problem. In reading, I see that the the exchange server stores the mailboxes for each user. I also see that there is a way to rebuild and error check the mail store, I was wondering, that since no one else has an issue, if there is a way to simply rebuild the exchange mailbox for a single user.

Try exporting what you can of their mailbox to PST, then mail disable the user, deleting the mailbox. Re-enable (with an empty box) and re-import
