I have an Exchange 2003 with Outlook 2007 environment. Only 100 users. Exchange on server 2003 SP2. We relocated to a new building and connected Exchange and other servers to our Nexus switches. Since this move, when users open up a calendar appointment or meeting and then open another appointment/meeting Outlook goes into a spin, greys out and hangs up. The only change is a new building, new network and Nexus switches. Also, one user experiences the same issue when he tentatively accepts an appointment and wants to edit. I'm going to have him check and see what his editor is in Outlook. There are not errors on the server for any of these calendar issues. We do use MeetingPlace (Cisco) as well, but the calendar issues are both regular Outlook appointments and Cisco meetings.
