    I'm convinced that my problem with clients connecting is that they are getting the wrong certificate. How do I tell Exchange to present a different certificate?

    You can only have one certificate enabled for IIS at a time. This is the certificate that is assigned to the IIS service in ECP.
    Therefore it is possible to have multiple certificates in Exchange, but only SMTP service can have multiple certificates assigned to the service.

    Certificate management is in ECP, under Servers, Certificates.
