  • Password protect mailbox in 2007

Is anyone familiar with a method to encrypt or password protect a mailbox in Exchange 2007?
The idea is to prevent the administrator from seeing mailbox of the CEO, CTO etc.

    Sack the administrator.

The whole point of Exchange is that it is protected by the permissions in the domain. The administrator of the domain is trusted not to go looking. If the administrator cannot be trusted then they should be relieved of their duties. Someone has to hold the keys to network and everything, and that should be someone with the relevant skills - which the administrator has, the CEO does not.

I could have access to multiple mailboxes of CEOs of multi million pound companies, do I access them - no.

You are seeking a technical solution to a procedural/human resources/behaviour problem, and therefore you will fail to find one.
