if I use the below command I can export all the mailboxes into pstfiles. Now certainly I don't want to do that, but how can I do it for Ex-employees or individual mailboxes?

    Get-Mailbox | Export-Mailbox -PSTFolderPath C:\PSTFiles

    Exchange 2007 Standard Ed, Win2k3 server x64.

Are you running it from the Exchange powershell and not powershell?

running it from the Exchange Management Shell on a different server, this one is wink3 x32 bit since, you can't run the export cmdlet on x64.

so now different server but I can't seem to get the cmdlet working properly.

also trying it from my xp pro os.

I had to download exch 2007 and install the Management tools only in order to get the management shell to work with x32 OS.

Has the issue now been resolved? Is there a reason why you can't use it on the Exchange server or are you using 32 bit Exchange 2007?

Issue is not resolved. You can't use the Export cmdlet on a 64bit OS. So what I did was (per bill gates) I installed Exch 2007 x32 bit on a windows x32 bit server that is a servermember on my network. Which is fine, since you can select just the Management Shell. After install I rebooted the server and ran my cmdlet with a user. Still can't get it to work properly this is what I get:

[PS] C:\>Get-mailbox -Identity [email protected] -pstfolderpath c:\pstfiles
Get-Mailbox : A parameter cannot be found that matches parameter name 'pstfolde
              rpath'.
              At line:1 char:59
              + Get-mailbox -Identity [email protected] -pstfolderpath <<<< c:\pstfiles
              [PS] C:\>

I think you've forgotten to add the pipe and export-mailbox command bit.
                cheers

ok now this is my latest update:

After applying this to the users inbox: Add-MailboxPermission -Identity john -User Admin01 -AccessRights FullAccess.

I re-ran the command and now I get the below error.

ok I figured it out. I added my account to the Exchange Admin group, log into the Win2k3 server as myself and ran the cmdlet, boom it works!

                      close this one out!!
