    I have very limited knowledge and workings with any Exchange server, but I've got a 2003 one that when I disable a user account in AD that account still receives email. I would think that email would be bounced for that user as it's a disabled account, but it's not. Am I wrong in thinking this or is something incorrectly setup?

    That is the correct behaviour. A disabled account will continue to receive email.
    I don't actually recommend disabling accounts anyway. Better idea is to remove all permissions, change the password to something very long and then hide the account form the GAL. You can change the permissions on the account to stop it from receiving internal email and external email can be stopped by changing the SMTP address.
